I've taken it that you have used stuff that is meant to deter cats, this should work with rabbits just as well. You could try placing broken eggshell around the roses, this is supposed to be a good deterrent. Another thing you could try is a scarecrow (seriously) or something resembling a human being stood up near the roses. I am assuming here these are wild rabbits, right?
